Buckwheat Bread Recipe
6 tbsp buckwheat flour*
1/4 tsp salt
1 tsp baking powder
3+ tbsp water
1/2 tbsp soft (not liquid) coconut oil
Mix dry ingredients together first. Add water and mix. The consistency should be a bit thicker than pancake batter; if the batter is more dry and dough-like, add water by the half-tablespoon until the proper consistency. Add the oil, and mix till smooth.
Oil a microwave-safe bowl or mug, and pour batter in. (I just mix it up in the container I cook it in.)
Microwave for 2 minutes, until the middle of the top is dry.
Let the bread sit in its container for about a minute, then run a knife along the inside edge of the bowl. Flip out the bread, and let it cool for about another 5-10 minutes.
*The video shows the use of coconut flour. Since publishing the video, however, I've altered the recipe to a better taste and consistency, and it now no longer uses coconut flour.
